Chili is one of those really versatile foods that can be personalized by each child (and adult). The great thing about chili is you can sneak all kinds of vegetables into it and the kids usually don’t know. Onions and tomatoes are a given because I just can’t imagine making chili without them, bell peppers of any color are great; the flavors are usually mild and on the sweet side so the kids don’t notice.
